OK, so you love to bake bread from scratch the old fashioned way, making the dough yourself. Well, with one of the Cuisinart Sm-55 5-1/2-Quart Stand Mixers you will do it in your sleep, well at least if you love the machine as much as I do.
Do not get me wrong, I love breadmakers and for everyday use they are perfect. I know you sense the BUT coming, we make something we call "potbrood" in South Africa. It is a fancy bread we make with our "'potjie kos," a glorified stew and we make it in a black iron pot on an open fire. For that my stand mixer comes in handy.
You cannot make a "potbrood" that is as small as the amount of dough you can mix in a breadmaker. So, that is the one place where you really have to mix your dough in another way. Kneading it is not my favorite pastime so I use my mixer.
So, I must have a machine that can handle really heavy mixing as we add all kinds of stuff to our "potbrood." Lots of onions, cheese, bacon and more. So, this makes for a very heavy dough and you need a strong machine for it.
The surprising thing is, it is actually a very light machine and easy to put away if you do not have enough counter space to keep it out all the time. One would have thought that this will make it jittery, but that is not the case. It works perfectly; you do not have to scrape the dough of the paddle as often as you would expect to and it is simply and easy operation.
Then we get to another use I have for my mixer. I love to make truffles to serve as petit fours after dinner. Mixing the chocolate by hand is possible, but you simply get a much better texture if you use a really good machine to do it with. I cannot tell you how many batches I've made and all of them came out fine. So please, take everything, just not my stand mixer!
