There are many jobs where the public would feel very unhappy if they could not be assured that those undertaking the work had been properly trained to carry it out safely. We wouldn’t be comfortable sitting in a taxi, if the driver had not passed a driving test or reassured if the surgeon carrying out an operation was unqualified. It may not always be remembered but the handling of food unsafely can lead to serious illness or even death. For this reason food handlers are required to have received food hygiene training or instruction.
The law states that: “all food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activity” (REGULATION (EC) No. 852/2004 – GENERAL REQUIREMENTS – ANNEXE ll - CHAPTER XII).
In other words everyone working with food must know what they are doing. Food handler’s hygiene training is important.
There are many ways in which food businesses can arrange food handler’s hygiene training. Traditionally, food handlers were sent on courses, either for a single day or spread over a couple of evenings. Such food handler’s hygiene training was often provided by the local environmental health department, in the Civic Offices or Town Hall. Few local authorities now have the resources to carry out such time-consuming food handler’s hygiene training.
Local education colleges often provide food handler’s hygiene training, sometimes as part of their general catering courses. This can be a reasonably priced source of food handler’s hygiene training.
There are many commercial training companies who will provide food handler’s hygiene training, either at their own premises or on location at the client food business. This can be a convenient, although often expensive, solution to the requirement for food handler’s hygiene training.
The other solution is for the food staff to undertake distance learning food handler’s hygiene training, either by post, using a computer programme or online. This type of food hygiene training is becoming increasingly popular because of its convenience and economy.
