For mages you might want to try out Nagrand in Outlands. In Nagrand you will be able to farm Voidspawns. Voidspawns drop Motes of Shadows and Motes of Fire, both of which are valuable if you resell them. These can be combined them into Primal Shadow or Primal Fire. Depending on the auction house rates, you can sell the Motes individually or combined three of them and sell the primal form. You will need to check what the most profitable way is.
The Torokka Forest located around the Allerian Stronghold is another great place for a mage to farm. There are two different types of mobs you will confront; warp stalkers and basilisks. You will get warped flesh from the warp stalkers and you can skin the basilisks for Knothide leather if you have the skinning profession. One important point that is true no matter where you farm is to make sure you have large bags. The more you can carry, the longer you can farm, and the more you can earn.
