One of the best things about shadow leveling is they have the ability to almost have no down time with there grinding as such, because of there vampiric embrace (a move) they get nature regen both mana and health and they also have the ability to heal, making them a very good spec to level as.
Shadow priest is also healing healing himself while doing damage and has quite strong cc combined with dispersion makes him quite strong and hard to kill. This is also a good choice if you are playing on a PvP realm as shadow priests are not an easy target to gank.

Naturally, the spec is adjustable but the core must be same. If your looking to never die and your not in a rush to 85 then you could go discipline but you really should just go shadow, because there is no real reason to go disc until 85, if you do go discipline then i would suggest getting the angel wings with smite and holy fire.
For off spec dungeon healer suggested is to be disc until you reach level 75 and go holy after that, which with the changes in Cataclysm, would be a much better choice.
Okay lets just go over it, shadows is your best bet for leveling to 85. Whether you're on a PvE or PvP realm, as a shadow priest you will have least trouble leveling.
