Easy canape ideas
Here are some really simple canapé ideas to help get your party going. The idea of a canapé is basically a small bite sized snack which can be picked up with the fingers and eaten with usually one bite. You can come up with any combinations you like, we suggest 6 per person for pre dinner canapés or 8-10 for a canapé party.
1. Classic bruschetta
This is probably one of the easiest canapés to make, slice a small French baguette into rounds and place on a baking sheet, drizzle with olive oil and season with salt and pepper then bake in a hot oven until crisp and golden brown, set aside. To make the bruschetta topping finely dice tomato, garlic and onion and mix together with a drizzle of olive oil, salt and pepper and chopped basil. To serve place a teaspoon of the mixture onto the baguette crouton, the top with mozzarella and a basil leaf.
2. Caramelized Red Onion, Goats Cheese and Walnut Parcels
These are really simple to make and go down a storm at a canapé party, these canapés keep everyone happy. To make 20 canapés start by making the caramelized red onion by slicing 1 red onion and gently cooking on a low heat with 1 tsp of olive oil, add a pinch of salt and pepper along with 3 tablespoons of brown sugar and one tablespoon of red wine vinegar. Cook this mixture down for approximately 20 minutes until a jammy consistency is achieved, allow to cool.
Take your filo pastry and cut into 2 inch squares and then place under a damp cloth to stop the pastry drying out. Meanwhile melt a knob of butter and cool slightly, to assemble the parcels you need to build up at least 3 layers of the pastry, so do 5 at a time to make it easy. Lay out your first layers of pastry and brush with the melted butter, then place a second layer of pastry diagonally on top of the first layer and again, brush with butter, repeat this step again placing the pastry diagonally onto the second layer and brush with butter again. Place a small teaspoon of the caramelized onion along with a small piece of goats cheese and a little chopped walnut in the centre of the pastry. To finish lift the pastry with you hands and squeeze together the corners, this should create a small parcel with frilly edges, cook in a medium hot oven for 10-15 minutes until crispy and golden and serve immediately
3. Goats cheese, pesto and cherry tomato crostini
This is a really easy canapé which can be served hot or cold. First slice a small French baguette into rounds and place on a baking sheet, drizzle with olive oil and season with salt and pepper then bake in a hot oven until crisp and golden brown, set aside. Top each crouton with 1/2 tsp of pesto and a round of goats cheese, and then finally half a cherry tomato with the sliced side facing up. Season with rock salt, freshly ground black pepper and a drizzle of olive oil and bake in a hot oven for about 5 minutes until melted. Serve straight from the oven or allow to cool before serving. It's a nice touch to garnish each canapé with a fresh basil leaf.
