What to do with Your Leftover Turkey from your Traditional Thanksgiving Dinner
I was at the gym this morning and while trying to work off the potential pounds I will be gaining this Thursday from the traditional Thanksgiving dinner I will be sharing with my boyfriend's family, I saw this story on the local news and wanted to pass it along to you. The story was about what to do with your leftover turkey. What I liked about these ideas are that they are fast and easy to make and two of them can be served as gluten free dairy free meals.
As I discuss in the book, Budget Bash – Simply Fabulous Events on a Budget, make your event planning fun and economical, and these ideas for leftover turkey from your traditional Thanksgiving dinner can help you stretch your dollars (as long as there are leftovers).
Take your leftover turkey, shred the meat, add some BBQ sauce and create a "pulled" turkey dish. If you want, serve coleslaw with a vinaigrette dressing and potato chips on the side to keep it gluten free dairy free. Or, for those not restricted to a gluten free diet, toast a chiabatta or hamburger bun and create a "pulled" turkey sandwich.
Another quick and easy idea for leftover turkey from your traditional Thanksgiving dinner is to create turkey lettuce wraps for those restricted to a gluten free dairy free diet, or create turkey burritos if you are not restricted to a gluten free diet. For the turkey burritos, take your leftover turkey meat and either pull it apart or shred it. Then sauté onions and peppers in a pan with some olive oil. Once the onions and peppers are soft, about five minutes, add the turkey and heat. Once warm, remove from heat and serve on a large Romaine or Iceberg lettuce leaf and wrap. Add your favorite salsa and enjoy!
Again, if you are not restricted to a gluten free dairy free diet, warm a tortilla and spread the mixture onto the tortilla, add some grated Mexican-styled cheese and wrap. Top it off with salsa and sour cream!
Finally, you can always go with the old stand-by with your leftover turkey by making a turkey pot pie. Add some of the leftover vegetables into the pie served from your traditional Thanksgiving dinner and enjoy!
