Why is Charcoal’s Better Than Gas

Much debate has been raised concerning which is better gas or charcoal?  Now, I have considered both methods very closely and I must say that a gas grill is much more convenient and faster in use than charcoal any day.  Nevertheless, when it comes right down to it, I consider myself to be a "charcoal man".  That means that I prefer to grill using charcoal over gas.  In fact, we "charcoal people" would say that charcoal is just plain better than gas!

But why is it better; that is the question.  That's is why, a few years ago a small group of us "charcoal people" got together and did our own "nonofficial study" to see just why is charcoal better than gas.  Our motivation was simply the enjoyment of cooking and eating "barbeque".  IT TASTES SO GOOD!

Hence, after countless hours of barbequing using both methods; barbequing pounds and pounds of meats, all different varieties (ribs, pork, chicken, and beef and the occasional game species).  We discovered that that it basically comes down to TEMPERATURE.  That's right TEMPERATURE.  That may surprise some folk at first, but those who barbeque and -- I mean really barbeque -- understand this point.  Charcoal allows you to cook at a higher rate of temperature than a gas grill ever will.  But, don't stop there, that just the first factor as to why charcoal's better.

Secondly, and more importantly, charcoal allows you to cook with what I will call "favor".  We charcoal people explains this "flavor" by pointing at a slab of ribs and showing the distinctive smoke ring in the ribs. . . . stop. . . (I am getting hungry!).  That's where the flavor is!  We haven't even applied the sauce!  We haven't even used the seasonings!.  The flavor essentially starts in the smoke.  Oh my goodness!  That is the god's honest truth and that is it in a nutshell.

Some people say that you can get a smoke ring from a gas grill; and they prove this by incorporating some wood clips in the barbequing process.  Now that is just plain silly!  That is like using artificial lemon flavor in your lemonade!  WHO WANTS THAT!  No, you want real lemons in your lemonade I am sure you would agree.  The same is true when barbequing.
