Zesty Lemon Chicken and Thyme Recipe For Hamilton Beach Slow Cooker

Slow cookers povide healthy, delicious, time saving meals this zesty chicken and thyme recipe is sure to be a winner with your family.

What chicken pieces you use is entirely up to your own taste preference but I prefer to use whole jointed chickens to provide both white and dark meat, leave the pieces on the bone it adds so much to the flavour and the meat will fall away after cooking.

Timings given are for a 6 quart Hamilton Beach slow cooker you may need to adjust for other makes and models.

Ingredients.

4 lbs Chicken Pieces

2 cup chicken stock
½ cup white wine
Good sprig of thyme (substitute dried if fresh not available)
1 crushed clove garlic (substitute paste if needs be)
Half lemon
1 tablespoon crème fraiche (optional)

Method.

Place all the ingredients except the chicken and lemon in the Hamilton Beach slow cooker, add the juice of the half lemon and then add the skin for added zesty flavour (discard before serving), season the chicken pieces with freshly ground black pepper and salt then add the chicken and ensure it is well coated with the mixture. NB. To really infuse the flavours this can all be done the night before cooking to allow the mixture to marinade. Cook on LOW for approximately 4 hours or on HIGH for approximately 3½ hours until internal temperature reaches 180ºF. Prior to serving, remove the lemon and thyme and if you like stir in the crème fraiche for added creaminess and thickness.

Serve with mashed potatos or rice and steamed vegetables.
