Colorado Peach Pie

Just sitting here writing about this delicious fresh peach pie makes my mouth water. Fresh peaches make this pie recipe out of this world good but if you do not have any fresh ones on hand simply drain some canned ones or use frozen ones. Either one will work and this recipe will still turn out.

Colorado peach pie is the perfect pie to make when you are having a dinner or luncheon because it tastes heavenly and does not take much preparation time. This is one of the simplest pie recipes I have ever made. There is a special crust recipe included in the recipe but I have already just used my original crust recipe. If you really want to cut your time in half simply use a premade crust.

Here is a list of the ingredients you will need.

For the filling:

4 cups of fresh, sliced peaches ( or drained canned peaches)

1 cup of white sugar

2 Tablespoons of flour

1 large egg

¼ teaspoon of salt

½ teaspoon vanilla

1 cup of sour cream

 

For the crust:

½ cup melted butter or margarine

½ teaspoon salt

1 ½ cup of all purpose flour

 

Topping:

1/3 cup of white sugar

1/3 cup of all purpose flour

¼ cup of butter or margarine

1 teaspoon cinnamon

Start by blending together your melted butter or margarine and flour and salt for your crust. Cut together with a pastry blender or a fork. When well mixed and crumbly, press into a nine inch pie pan. Set the crust aside.

Next, make your topping by blending together your sugar, flour and salt in a medium size mixing bowl. Then add your egg, vanilla and your sour cream and mix well. When well blended fold in your peaches carefully. When well blended, pour the filling into the pie crust and bake at 400 degrees for twenty minutes.

While your pie is baking make your crumbs. Simply blend together your sugar, flour, butter, and cinnamon until the mixture is fine crumbs. A hand mixer works well to get it blended. After the pie has baked for twenty minutes, take it out and add the topping and bake for yet another twenty minutes.
