Peanut Butter Oatmeal Cookies

Ingredients

  • 2 cups oats
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup lowfat peanut butter
  • 3/4 cup margarine
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar substitute
  • 2 eggs
  • 2 teaspoons vanilla

Instructions

  1. Preheat oven to 350 degrees F. Stir oats, flour, baking powder, baking soda and salt.
  2. Beat peanut butter and margarine until smooth. Add sugars, mixing well.
  3. Beat in eggs and vanilla. Add oat mixture.
  4. Shape into 1-inch balls; chill dough if too soft to handle.
  5. Place 2 inches apart on greased cookies sheets. Flatten with floured fork in crisscross pattern.
  6. Bake 8-10 minutes.

  3. Spoon out in heaping large tablespoonfuls onto lightly greased cookie sheet.
  4. Flatten loosely with a fork and sugar then cook for 10 minutes; Remove to cooling rack after two minutes.
