Step by Step Instructions to Making Emily's Delight Dessert
My cousin Emily loved the dessert as a child and still does to this day. Hence the name Emily's Delight. Of course there are not very many people that do not love this creamy dessert. It is very simple to make and always disappears when I serve it. Here are some simple instructions on how to make it.
First, here is a list of all the ingredients you will need:
1 regular size package of Oreo cookies
1 stick of margarine or butter
3 ½ cups of milk
1 regular size tub of whipped topping
1 eight ounce package of cream cheese
2 packages of instant vanilla pudding
Once you have your ingredients all measured out and ready, put your Oreo cookies into a plastic ( I like using a Ziploc) bag and pound with a rolling pin until they are nothing but coarse crumbs. Separate about a cup of the cookie crumbs out and set aside.
Next, melt your margarine and butter. Then, put the remaining cookie crumbs into a small mixing bowl and pour the melted butter or margarine over them and mix well. When well mixed, press the buttery cookie crumbs into the bottom of your serving container. You can use whatever shape you like but a flat Tupperware often works the best.
Then, in a medium size mixing bowl mix together a half of a cup of milk and cream cheese at low speed. Set aside and in another mixing bowl mix three cups of milk and your instant pudding together on low speed. When well mixed, pour the two mixtures together and blend well.
Pour the blended mixtures onto the cookies and spread evenly over the entire pan. Then, spread the whipped topping over the top and sprinkle with the remaining cup of Oreo crumbs. Serve cold.
I like putting my pudding in the freezer and serving partially frozen. Its almost like an ice cream cake. Another thing you can try is a different flavor of pudding. I have used one instant banana and one vanilla and it was delicious. You can also use both banana or try using one or both chocolate. Simply use whatever is your favorite!
