A wide variety of tempting dishes, diverse tastes, different preparation methods and numerous aromatic spices- welcome to India- the land with world's most diverse cuisine. Indian food is characterized by a wide assortment of dishes and cooking techniques. This tempting and exotic food is prepared with subtle use of many spices and vegetables.

Mostly the Indian curries are cooked in vegetable oil. But depending upon the geographical diversities, people in north and west use groundnut oil while people in east use mustard oil. Contrary to this, in south India, coconut oil is more preferred. In recent decades, even the sunflower oil and soybean oil have gained popularity all over India. Apart from that, Indian cuisine are prepared with spices like chilli, pepper, black mustard seed (rai), cumin (jeera), turmeric (haldi), fenugreek (methi), asafoetida (hing), ginger (adrak), coriander, and garlic (lassan). In several parts of India, tejpatta (cassia leaf), coriander leaf, fenugreek leaf, mint leaf, cardamom, nutmeg, saffron, and rose petal essence are also used to add a special flavour to the food.

History
The rich cuisine of India evolved with the cross-cultural interactions with the neighboring Middle East and Central Asia. Sesame, eggplant, and humped cattle were first introduced to the Indus valley around 7000 BC. Turmeric, cardamom, black pepper and mustard were also harvested in India in 3000 BC.

Later India was invaded by the Arabs, Mughals, Persians, Portuguese, British and rulers from Central Asia.It also influenced the Indian cuisine. Tomatoes, chillies, potatoes, rich gravies, pilafs and non-vegetarian fares such as kebabs were introduced to the Indian subcontinent.

Specialties According To The Geographical Diversity
Indian cuisine is distributed in five major parts: northern, eastern, southern, western and north-eastern. Some parts are rich in dairy products and a few are known for their thick gravies prepared with aromatic spices. In India, you will find a variety in breads as well ranging from tawa roti to tandoori roti, naan, puri, bhaturey etc. Indian food is rich in vegetarian as well as non-vegetarian items. The specialty lies in stuffed items, which are prepared with the fillings of cheese, mushroom, peas, and a few dairy products. The best part with Indian food lies in its sweets and variety of pickles. Almost every state here is famous for its unique sweets.

Several parts of the country have tea and coffee plantations as well. Therefore, one can have the finest varieties of tea-coffee here. Other beverages include nimbu pani (lemonade), lassi, chaach, badam doodh (milk with nuts and cardamom), sharbat and coconut water. A few alcoholic beverages like bhaang and feni are also quite popular in India.
