How to Lower Cholesterol and Beat Heart Disease

Carrots promote healthy vision, we've all heard mothers encouraging their children to eat carrots, but they do more than that. Carrots are filled with pro-vitamin A, B3, C. and E., they have anticancer properties, they are full of fiber, they are attributed to preventing gastrointestinal problems and are known to prevent cancer and heart disease by reducing the levels of cholesterol.

Beta-carotene, which is responsible for improving vision, gives the eye the benefits of vitamin A. found in carrots. Night blindness is the result of a lack of vitamin A.

The beta-carotene found in carrots is also an anti-oxidant. Anti-oxidants are known to slow aging by fighting free radicals. These free radicals can cause cancer and heart disease. Carrots also contain another anti-oxidant, alpha-carotene. Alpha-carotene is known to reduce the possibility of lung cancer.

The important nutrients found in carrots lie close to the skin and in order to benefit completely from carrots, you should eat them cooked. Boil the carrots in enough water to just cover them until they can be pierced with a fork. Do not over-boil any vegetables, including carrots to avoid losing valuable nutrients. Overboiling vegetables allows these nutrients to escape in the water and steam.

Add carrots to soups and other meals, such as stews to profit from all their goodness. Another way to get more carrots into your diet is by adding them to other fruit and/or vegetable juices. In order to maintain the level of vitamins in the carrots, remove the leaf parts before storing them in your refrigerator. Just 50gr of carrots will give you the daily intake recommended.
