Hover your mouse over the links to see where you'll go. If it claims to be from HP but resolves to something strange that isn't hp.com but some gibberish with a load of dashes in it, something's up. You can tell it's trying to hook you to go to a bad site. Most fakes are obvious when you take the time to assess them. Widespread misspellings that no company would allow, missing words, and an unprofessional layout can be very obvious.

Email addresses can be faked, so this doesn't fully protect you. If it's a pdf with a bill or something like that, you should be able to see the info in your account on the company's site. If you regularly get a statement from a company, you know the attachment is safe. Be warned; Links that come from friends can sometimes be viruses. This has happened to friends on Facebook.
