African American soul food comes from a long history of struggle, triumph and survival. Now over 400 years later soul food continues to evolve to meet the needs of the people who love it.

New cooking techniques, lighter ingredients, less fats and more natural seasonings have made today’s southern favorites adaptable to meet the needs of the health conscious consumer.
