If you think the unique and delicate taste of caviar is reserved only for the rich and famous, you’re wrong. Lots of regular people enjoy the interesting flavor and you can too. If you’ve never eaten or purchased caviar, then you’re in for a real treat. However, there are a few things to keep mind while out on your first caviar shopping excursion. Don’t be intimated, instead follow my tips and suggestions and you’ll be an expert in no time.
There are many types of caviar, so you should narrow down the choices before you go out and make your first purchase. If you’re looking for the most popular, high-end variety, then you’ll want to check out Beluga, Osetra and Sevruga. Beluga is by far the most popular and expensive of the three. It’s very rare and also very large. The roe appear grayish to blackish in color. Osetra is also a larger roe and ranges from a yellowish gray to dark brown color. Sevruga is noticeably smaller than Beluga and Osetra, and it ranges in color from gray to black. It may be difficult to tell the difference between the three types at first, so just remember that Beluga always comes in a blue tin, Osetra comes in a yellow tin and Sevruga can be found in a red tin.
If you’re on a tight budget, high-end caviar will certainly not be a frugal purchase. In general, Beluga caviar costs about $150 per ounce, while Osetra hovers around $120 and you can find Sevruga for about $100 per ounce. So just make sure you are prepared to spend a significant amount of money. Also try to buy only as much as you are planning to serve because caviar has a rather short shelf life. Once it has been opened, it will only last for about 3 days as long as it is stored properly at 30 degrees F.
So now that you have a little more information about caviar, its time to go out and buy some, but you can’t just go to your corner supermarket to find high quality. You should either shop online at a caviar retailer or find a gourmet food shop in your area. If at all possible, ask for a sample of the caviar before making your purchase. In general, most retailers won’t mind offering a taste. Once you’ve made your decision, check to see if the word ‘Malossol’ is printed on the tin. It just means that the caviar has been lightly salted and it’s a great indicator of high quality.
