India is a diverse and historic land with an equally complex and diverse reputation for delicious cuisine. The cuisine of India is characterized by the sophisticated and subtle use of herbs, spices and also for the widespread practice of vegetarianism across some groups of its culture. Each branch of Indian cuisine is distinguished by a broad assortment of dishes and food specialties that vary from region to region. Variety that you might expect considering the large and varied demographics of the ethnically diverse Indian subcontinent.
Chutney
The Islam translation of "to make chutney" is a common idiom meaning "to crush". This is because the process of making chutney often involves the crushing of ingredients together.
Vada is another traditional South Indian food known from antiquity. Vada can vary in shape and size, but are usually either doughnut- or disc-shaped and are about between 5 and 8 cm across. They are made from dal, lentil, gram flour or potato.
Tandooi Chicken
To choose another example, chicken is a common component of dishes from around the world. Poultry meat is used in the cuisine of France, China and Finland. It can be found in South Africa or Northern Canada. But nowhere else but India gave birth to a worldwide favorite: tandoori chicken.
In some modern versions, both red and yellow food colourings are used. It is traditionally cooked at high temperatures in a clay oven know as a tandoor.
Lamb Dishes
Lamb or mutton is part of Greek, Italian and the dishes of many other culinary innovators. Those too, after all, are ancient peoples that have mixed with others and had century upon century to experiment. Yet, how different is an Achari dish from India than a Greek mutton stew.
Could it be the coriander? No, that is known in Greece, too. Tomatoes are an everyday component of Greek dishes, too. Perhaps it is the turmeric, fenugreek, or other spices? Not entirely. Greek sailors traveled the known world in ancient times and saw much, bringing it back to their native country. Yet, the difference remains. Achari is exotic, lively and pungent. Greek stew is delicious, but mild.
