The result of this difference between copper cookware and cast iron cookware boils down to this question: Do you need that feature of variable heat cooking? This is the key point makes copper cookware the logical choice, if it’s a feature you need. On the other hand, copper is more expensive than cast iron. So if you don’t really care about fast changes, stick to the iron pots and pans.
