One of the ways to prepare quick, easy, economical and tasty family entrees is to use canned tuna. Here are some recipes using canned tuna that are sure to become family favorites. Tuna Pilaf with the rice, Oriental vegetables and soy sauce gives this dish an Asian flair. The Cheesy Tuna Peppers serve a hot tuna and noodle mixture in a bell pepper half.
TUNA PILAF
1 cup uncooked long-grain rice
1 tsp butter
2 green onions, chopped
2 1/2 cups water
1 (10-oz) pkg frozen mixed Oriental vegetables, thawed
1 (10-oz) can tuna in water, drained and broken into chunks
1 tbsp reduced-sodium soy sauce
Combine rice and butter in a small Dutch oven. Cook over medium heat 2 minutes or until rice is transparent. Add green onions and cook 1 minutes or until tender. Stir in water. Cover and bring to a boil. Reduce heat to low and cook 20 minutes or until water is absorbed. Add Oriential vegetables and continue to cook over low heat 5 minutes or until the vegetables are tender. Fold in tuna and soy sauce. Serve hot.
CHEESY TUNA PEPPERS
5 medium green bell peppers
1 package Tuna Helper mix for NOODLES, CHEESE SAUCE 'N TUNA
3 cups hot water
1 can (6 1/2 oz) tuna, drained
1 jar (2 oz)chopped pimientos, drained
2 tbsp chopped dried chives
1 tsp paprika
Cut thin slice from stem end of each pepper. Remove seeds and membrane; rinse. Cut each pepper crosswise into halves. Heat Noodles, Sauce Mix and water to boiling in a 10-inch skillet, stirring constantly. Reduce heat; cover and simmer, stirring constantly, for ten minutes. Mix tuna, pimientos, chives and paprika in large bowl; stir in noodle mixture. Place two pepper halves, cut sides up and side by side, on each of 5 plates. Spoon tuna mixture over peppers. Sprinkle with chives, if desired. Serve immediately.
