Bidz' Broiled Spanish Mackerel in White Sauce
Ingredients





1 Spanish mackerel, 3 lb



Parsley garnish





1 Lemon, sliced



1 tb Butter





1 tb Salad oil



1 Lemon, juice





8 cloves garlic



3 tb mayonnaise





1 tsp salt



2 tb soy sauce





1/8 tsp ground pepper



 






Instructions

Sauce:

Put in blender: garlic, mayonnaise, lemon juice, soy sauce. Blend till it becomes smooth.

Broiling:

Before broiling rub thoroughly with salt, brush with pepper and work in a little salad oil. Lay on broiler and brown well on both sides, being careful not to break it. Apply sauce and serve with garnish. If fish is large, split down middle of back before broiling.

About Spanish Mackerel:


Description: color of back green, shading to silver on sides, golden yellow irregular spots above and below lateral line; front of dorsal fin black; lateral line curves gently to base of tail.

Similar fish: cero, S. regalis; king mackerel, S. cavalla.

Where found: INSHORE, NEARSHORE, and OFFSHORE, especially over deep grass beds and reefs; absent from north Florida waters in winter.

Size: average catch less than 2 pounds (20 inches).

Remarks: schooling fish that migrates northward in spring, returning to southerly waters when water temperatures drop below about 70 degrees F; spawns OFFSHORE, spring through summer; feeds on small fish and squid.
