Summer’s here and it’s time to get cooking! Whether you’re after ideas for a quick weeknight meal, a leisurely family lunch or a healthy summer barbeque, to celebrate the summer season, which lasts 91 days, Great Hotels of the World have come up with 91 sizzling summer recipes sure to get your mouth watering!

Each recipe has been revealed by the top chefs of luxury hotels around the world and each one is packed full of summer flavour, so you’re sure to find something to suit everyone’s tastes and every occasion.

To get those taste buds tickling here’s a few teasers...

Cheese and sundried tomato parcels, – these little parcels are bursting with the flavour of smooth melting cheese and tangy sundried tomatoes, the perfect appetiser at a summer barbecue.

By Agalou Evagelos, Aldemar Paradise Royal Mare, Rhodes, Greece

• 100g gruyere cheese

• 100g feta cheese

• 100g filo pastry

• 30g sun-dried tomatoes

• 10g fresh basil

• Freshly ground pepper

• 20ml olive oil

Cut the cheeses into cubes and prepare three sheets of filo pastry, brushed with olive oil.

Lay the sheets of pastry out on a flat surface and place the cheeses, the sun-dried tomatoes and the basil on top. Sprinkle with freshly ground pepper and wrap up into an envelope shape.

Deep fry and serve immediately.

Stuffed calamari – if you enjoy seafood, then this delicious recipe is for you! It can be served as an appetiser or as a main dish.

• 75g calamari

• 75g prawns and fish, minced

• 10g bell pepper finely chopped

• 5g carrots finely chopped

• 5ml balsamic vinegar

Cut open the calamari. Season with salt & pepper. Set aside. Combine minced seafood, carrots, bell pepper and balsamic vinegar.

Carefully place a tablespoon of the seafood mixture on each calamari.

Turn over the calamari so that the mixture is touching the baking pan. Poach in the oven with boiling water for 15 minutes. Let it cool. Garnish with lemon wedges, sprig of dill, cherry tomato, kidney beans. Season to taste with lemon juice, salt and pepper.

Passionfruit and honey marinated strawberries with vanilla ice cream – Finish off a meal in style with this tempting and refreshing take on strawberries and cream – the perfect summer dessert!

• 100g crocant

• 60g vanilla ice cream

• 150g fresh strawberries

• 15g passion fruit juice

• 25g honey

• 40g whipped cream

• 15g vanilla sauce

• 15g balsamic caramel

Place the crocant basket in the middle of the plate, scoop the ice cream into the middle of the basket. Dissolve honey in passion fruit juice. Cut strawberries into four and toss them with the honey and passion fruit juice, then place them on top of the vanilla ice cream. Sprinkle vanilla sauce and balsamic caramel around the basket and pipe whipped cream for garnish.
